OBS: somente retirar a parte que ser\u00e1 cortada no dia, n\u00e3o limpar o pernil inteiro, pois a pele e a gordura servem de conserva\u00e7\u00e3o.<\/div><p>Corte<\/p><div>\u00a0<\/div><div class=\"col-lg-12\"><p>Manuseando a faca suavemente, efetuando-se cortes paralelos entre si, na dire\u00e7\u00e3o oposta ao casco na zona do jarrete.<br \/><strong>SEGURAN\u00c7A:<\/strong> A m\u00e3o que n\u00e3o segura a faca, deve estar sempre apoiada no lado oposto ao sentido do corte.<strong>Marca do osso<\/strong><br \/>A medida que se corta, deve-se tornear o osso do quadril, marcando-o com a faca.<\/p><p><strong>Apresenta\u00e7\u00e3o<\/strong><br \/>A fatia perfeita de presunto cru deve ser muito fina, quase transparente e com menos de 5cm de comprimento.<\/p><p><strong>Conserva\u00e7\u00e3o<\/strong><br \/>Uma vez acabado o servi\u00e7o, o presunto deve ser enrolado em pl\u00e1stico filme para manter a umidade. Depois de alguns dias quando for servido novamente, recomenda-se retirar uma camada bem fina na parte superior antes de come\u00e7ar a servir, pois naturalmente a parte superior estar\u00e1 oxidada.<\/p><p>Temperatura de conserva\u00e7\u00e3o: entre 18\u00baC a 25\u00baC. Validade: Se bem conservado pode durar at\u00e9 6 meses.
